Autumn makes me think of pumpkins, apples, fall-colored leaves, and shorter days. The weather isn’t as hot and is more enjoyable.

RECIPES

Crock Pot Pork Loin (Adapted from the Country Cook)

3-4 pound pork loin roast 

2 Tablespoons unsalted butter

1 small onion, thinly sliced

6 cloves garlic, minced

1 Tablespoon minced ginger

1 1/2 cups packed light brown sugar

1 cup lemon-lime soda

1 cup white vinegar

4 1/2 Tablespoons soy sauce

1 1/2 teaspoons Watkins Black Pepper

3 Tablespoons cornstarch

3 Tablespoons cold water

fresh chopped parsley, for garnish (optional) 

1. Place the 3-4 pound pork loin roast, fat side up in the bottom of a slow cooker, set aside.

2.In a large skillet over medium heat, melt 2 Tablespoons unsalted butter and add 1 small onion, thinly sliced. Cook until translucent, about 5-8 minutes. Add 6 cloves garlic, minced and 1 Tablespoon minced ginger, cook until fragrant, 30 seconds. Pour this over the roast.

3.Whisk together 1 1/2 cups packed light brown sugar, 1 cup lemon-lime soda, 1 cup white vinegar, 4 1/2 Tablespoons soy sauce and 1 1/2 teaspoons black pepper in a medium-sized bowl. Pour this on top of the roast.

4.Cook on low for 4-6 hours or on high 2-4 hours, I recommend slow cooking on low instead of on high if you have time. Pork is done when it is tender and the internal temperature reaches at least 165°F.

5.Take the roast out and set it on a serving platter to rest. Pour the sauce into the skillet from earlier or another large pot. Bring to a simmer over medium-high heat.

6.In a small bowl whisk together 3 Tablespoons cornstarch with 3 Tablespoons cold water until smooth. Slowly stream this into the sauce while whisking constantly. Bring back to a simmer and simmer for 1 minute or until thickened. You can either pour the sauce on top of the roast or serve it on the side.

7. Slice or shred the pork roast and serve. Add optional fresh chopped parsley, for garnish.

Pecan Chewies (Adapted from Add a Pinch)

1 cup butter

1 cup granulated sugar

1 cup packed brown sugar

2 1/2 teaspoons Watkins Baking Vanilla Extract

2 large eggs, room temperature

2 cups self-rising flour*

1 cup chopped pecans 

Preheat oven to 300° F. Spray a 9×13 baking dish with nonstick cooking spray. Optionally, line the 9×13 baking dish with parchment long enough that the edges extend for easily lifting the Pecan Chewies from the baking dish for cooling and cutting.

 Melt butter in a medium saucepan set over medium heat. Once melted, pour the butter into a large mixing bowl and beat together with granulated, brown sugar, and vanilla extract until well combined. Mix in eggs until well combined, followed by the flour. Stir in the chopped pecans and pour into prepared 9 x 13 baking dish. 

Bake until the bars are light brown, about 45 minutes. Allow to cool completely before cutting and serving.

 For each cup of self-rising flour, whisk together

1 cup all purpose flour

1 1/2 teaspoons of baking powder

1/4 teaspoon of salt

Make sure to whisk all these ingredients together well so that the baking powder and salt are evenly distributed within the flour.

Pumpkin Bread (Adapted from Smitten Kitchen)

I baked this bread and it is super delicious. I found I needed to bake the loaf for 75 minutes. Make sure you test for doneness as oven temperatures vary.

1 15-ounce can (1 3/4 cups) pumpkin puree

1/2 cup (120 ml) vegetable or another neutral cooking oil or melted butter (115 grams)

3 large eggs

1 2/3 (330 grams) cups granulated sugar

1 1/2 teaspoons baking powder

3/4 teaspoon baking soda

3/4 teaspoon fine sea salt or table salt

3/4 teaspoon Watkins Ground Cinnamon

1/4 teaspoon Watkins Ground Nutmeg

1/4 teaspoon Watkins Ginger

Two pinches of Watkins Ground Cloves

2 1/4 cups (295 grams) all-purpose flour

Topping

1 tablespoon (12 grams) granulated sugar

1 teaspoon Watkins Ground Cinnamon 

Heat oven to 350 degrees F. Butter a 6-cup 9 x 5 inch loaf pan or coat it with nonstick spray. 

In a large bowl, whisk together pumpkin, oil, eggs and sugar until smooth. Sprinkle baking powder, baking soda, salt, cinnamon, nutmeg, ginger and cloves over batter and whisk until well-combined. Add flour and stir with a spoon, just until mixed. Scrape into prepared pan and smooth the top. In a small dish stir together sugar and cinnamon. Sprinkle over top of batter. 

Bake bread for 65 to 75 minutes until a tester poked into all parts of cake (both the top and center will want to hide pockets of uncooked batter) come out batter-free, turning the cake once during the baking time for even coloring.

 Cool bread in the pan for 10 minutes and then remove bread, or cool bread completely in pan. Cooling completely in pan gives the advantage of letting more of the loose cinnamon sugar on top adhere before being knocked off. Some of the cinnamon sugar topping will fall off as you remove the loaf from the pan. Wrap bread in a tea towel and then put it in a paper bag, so the crust stays firm. The topping will lose its crispness if you store it in a plastic bag.
